Turmeric is all the rage now! If you haven’t tried it before, it adds a subtle curry powder flavour. This savoury Turmeric Waffle recipe is perfect for lunch, it can be served with a poached egg and rocket, it makes for a very inexpensive meal that looks and tastes a million bucks! Instead of using the traditional recipe for waffles and ‘folding in egg whites’ – we just use a standard pancake recipe that has been in the fridge for 30 minutes or so which thickens the mixture beautifully! By adding grated zucchini like this recipe for Zucchini Waffles, it gets a few serves of extra vegetables into a delicious crunchy and filling meal! Yes you can use your very own Slow Cooker to make a delicious quiche – perfect for an inexpensive lunch! Line your Slow Cooker with a bit of foil first (so that it comes out easily) and line with buttered bread, then fill with all the yummy ingredients you like. Ours, we included ham, mushrooms, cheese and cherry tomatoes freshly picked from my garden! A tip for this recipe is to use the Pumpkin and Zucchini Bread as a base instead of the white bread slices (added flavour and a little cheaper!) Yummy little savoury balls made with sweet potato and baby spinach. Eat enough for a lunch, or eat a few for a snack. These are perfect to always have on hand when sticking to a strict budget as they will get you through until dinner time! For this recipe we used baby spinach but you can also use kale if you prefer (baby spinach was cheaper at the time of purchase so we went with that!).
